A couple of weeks ago, Wes and I decided to try out a restaurant called “Piggie Pies” in Dallas. Pizza. Yum. We got one pizza and special ordered it so we could try two of their signature dishes. Ever since then, we have both been dreaming about this place. They had this absolutely amazing goat cheese pizza. To die for… so so good.
Last night, I tried to recreate it. It wasn’t nearly as good, but it was a lot healthier and was still tasty. I think the part we both liked the most about the Piggie Pies one was the crust. It was so fluffy, but also thick. The pizza I made yesterday was on a flat bread, so it wasn’t nearly the same level of indulgence. However, I am excited to eat leftovers of it tonight. Here’s what I did:
3 tbsp flax seed
1/2 cup warm water
1/3 cup almond milk
1.5 cups whole wheat flour
lots of rosemary
about 1.5 tbsp olive oil, more or less
dash of salt
dash of sugar
I combined all the ingredients in my food processor and pulsed until it formed a sticky ball. Once the ball formed, I took it out of the processor and covered it with a light layer of flour. Then, I rolled it out pretty thin and baked it at 350 degrees for 25 minutes.
Once the dough had crisped up, I put on some chopped red onion, spinach, tomato sauce, fresh basil, goat cheese and a little mozzarella and parmesan. Then I baked it for another 15 minutes or so. I didn’t have a bunch of toppings on hand, but the ones I used added a lot of flavor and made for a yummy dinner.
A healthy filling dinner was definitely needed after yesterday’s workout. My little heart rate monitor told me I burned approximately 800 calories, just from a short walk/run with the Lizzers and a CG workout. I have been very focused today on making sure I drink enough water to avoid dehydration. I also need to invest in some more workout clothes that breathe a little better. It is already in the 90’s when I workout after work, and I know as summer progesses, it is only going to get hotter. I’m so happy summer is here 🙂
Tonight I am going to attempt making a (what sounds to be) very easy frozen banana yogurt. One ingredient is on the list. A frozen banana! We shall see. I have been letting my sweet tooth run a little wild lately, so am going to try and calm it down tonight with a “healthy” dessert.
