I am getting so very excited for my trip to Boston this weekend. There is going to be so much to see and eat!! I must remember to charge my camera tonight. Since I have Friday off, today feels like a Thursday, which is awesome! I have so much to do before the trip though… clean house, pack, get dry cleaning, make house roommate ready. Yikes!! Long list!
Since I’m leaving town I am on a very strict no eating out, no grocery shopping kick. I am trying to consume everything in my fridge since it won’t be touched until Wednesday or so of next week. Somethings will be fine for sitting that long, but the majority of my fresh produce will not be. Last night’s dinner was very helpful in eliminating some of the squash and zucchini left in my fridge. This was a super quick and easy fix for a massive amount of summer squash. Here’s what I did:
Summer squash “pizza”
Several yellow squash
fake butter spray ( you can use olive oil, regular butter, yogurt butter, etc…)
Cut your veggies in half, width wise. Then cut them into long relatively thin strips. Mine were about 1/4 an inch thick.
In a small bowl, mix together garlic, melted butter, parsley, and s&p. All of this was done to taste, so measurements are tricky. I really don’t think you can go wrong though… Once mixed, drop your veggies into the mixture and coat both sides. Lay them on a cookie sheet. Sprinkle the tops with a little bit of parmesan and really any other spice you want to throw on there. I added some garlic salt. Broil in oven for about 6-8 minutes, or until the cheese is starting to look brown. Monitor these pretty carefully b/c the parmesan can go from nice bubbly brown to burnt very very quickly!
I thought these guys were delicious. Wes did also. He kept referring to them as veggie pizzas and said “we are making these again.” Boy approved!! I paired them with a salmon burger, but they would be great with almost anything. I imagine chopping them into tinier pieces and throwing them into salads would also be awesome. So easy and pretty healthy also!!
I am beginning to stress a little about getting stuff done before I leave. I need more hours in the day!!! Don’t we all?!
