I haven’t been doing much cooking this week. The schedule has been rather busy, so I’ve been pulling things out of my freezer that I made earlier in the year and eating those.
I know I just made these like a week ago, but I froze half of it. Please make the quinoa stuffed bell pepper. You don’t even have to do the stuffed part. You can chop up a bell pepper and saute it in olive oil with a little salt and pepper, and then serve it over the quinoa mixture.
I just devoured my last portion of it for lunch and was practically licking the bowl to get every last piece of quinoa out. It is that good. Just make it.
