A Crepey Saturday

Today was Wilson’s last day living at my house.  I’ve loved getting to be his foster mom, but am so happy that he found a home all of his own.  His new family already loves him tons and has him set up with a bunch of brand new toys, a new collar, and his favorite food. And they have decided to keep his name, Wilson, which makes me very happy.  We left sweet Wilson enjoying a bone in his new backyard.

Before he left though, I wanted to make sure he had one really good snack to ensure he always thinks of us fondly.  So, I attempted crepes for my very first time.

I followed a simple recipe and made both a savory and sweet crepe.  The savory was a combination of tomato, squash, red onion, arugula, and cheese.  It was quite tasty.

The sweet was definitely my favorite though. And I’m pretty sure Wilson enjoyed the little pieces he had of it as well.  I filled the sweet crepe with peanut butter, honey, and bananas. A dogs dream come true.

A little bit of powdered sugar on top for the finishing touch. These were extremely simple to make and could be filled with so many different combinations.  I followed the recipe for crepes found here. I can’t wait to try a couple stuffed with goat cheese, basil, grilled chicken, and more veggies.  Doesn’t that sound yummy?

Hope everyone is having a great weekend. I’m off to drown my Wilson tears in a glass of wine and eat more cake tasting cupcakes.
