Strawberry Zucchini Muffins

Today was a serious test of my strength. I’m trying to get meals and snacks prepped for the rest of the week so that my evenings will be free for yoga and camp.  I bought a yoga groupon and am determined to get as much use out of it as possible, unlike the last one where I went to two sessions in a thirty day period.  Big time fail.

I decided I wanted to make another batch of my healthy muffins since they have been such a big hit over the last few weeks. Juicy, ripe strawberries were on sale at Newflower, so I picked up a few packs and settled on making Strawberry Zucchini muffins.

And I finally splurged on maple syrup.  Got me some of the good stuff, so instead of brown sugar, you will find maple syrup in this recipe.

Smelling the maple syrup made me want to forget all things Isagenix and instantly make some buttermilk pancakes, but somehow I resisted.  I think I could drink maple syrup just like you know who…

No shame.

Strawberry Zucchini Muffins
Makes 15 muffins
2 1/2 cups oatmeal
1/2 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
8 strawberries, finely chopped
1 1/2 zucchinis, finely chopped
3/4 cup applesauce
1/3 cup maple syrup
1 egg
1/3 cup egg whites
1 tsp vanilla

Preheat oven to 350 degrees.

In a large bowl, stir together oatmeal, flour, baking powder, baking soda, cinnamon and salt.  Once combined, add in remaining ingredients and stir until well mixed. Pour batter into prepared muffin tins and bake for about 30 minutes, or until a toothpick inserted in the center comes out clean.

Healthy and easy… a winning combination!  These muffins have approximately 100 calories per serving,1 gram of fat, and 19 grams of carb. And I’m fairly sure these are Isagenix friendly.  Yay!

Tomorrow we are back to somewhat normal eating. I can’t begin to tell you how excited I am about making my barbecue chicken crock pot meal tomorrow, especially if the weather is anywhere similar to how it has been the last few days. It will be the perfect comfort meal.
