Time to relax

This weekend was intense.  It was extremely fun and I loved getting to spend so much time with all of my friends, but there was a point when I said “I can’t wait for Monday.”

After two birthday parties, a birthday brunch, a baby shower, and a charity event, I was ready for Monday to roll around so I could get back into my routine and actually get some sleep.  I don’t know how Wes is going to do it; he is off to Vegas for a work trip for the rest of the week. At first I was a little jealous, but now I’m quite happy to be staying home.  Although I did ask him to put a quarter into the Sex and the City machine for me.

One of the other things I was really looking forward to about Monday was getting back into my Isagenix shake routine.  The parties were filled with awesome food (fajitas, queso, fresh salsa, desserts, etc), and while the food was delicious, I definitely noticed a difference in how I felt after eating.  It has been over a month since queso has touched my lips. That is a miracle in itself. And while it was somewhat missed, I think I can happily go another month. Ok, well maybe only two weeks…

To my rescue today was a pineapple strawberry shake!

I was searching for frozen mango at the grocery store but they didn’t have any, so I settled on frozen pineapple. It was a good choice.  Reminiscent of the tropical drink I created last week, this is another one of my new favorites. And it made for an extremely refreshing and surprisingly filling lunch.

Strawberry Pineapple Smoothie

8 chunks frozen pineapple
4 large strawberries
2 scoops Isagenix Vanilla Shake (or your favorite protein shake)
2 ice cubs
1 1/2 cups ice cold water
1/2 tsp coconut extract
1 tsp Chocolate PB2

Into the blender everything goes, whirl it around until is nice and frothy. Garnish with an additional strawberry.

A healthy lunch in less than five minutes. Can’t beat that!

This weekend kicked off birthday season for my group of friends. We have five in the next month, so I anticipate quite a few busy weekends ahead of us. And quite a few birthday cakes….

Speaking of cake, I made a chocolate gooey butter cake that also goes by the name “earthquake cake”  for April birthdays at my office. Completely decadent, but am excited to share that with y’all tomorrow. Until then, have a good Monday!
