If you are the type of person who lacks self control around sweet things, I suggest you stop reading now.
Knowing this, I still went ahead and made mini apple tarts because I simply could not resist them. For one, they are adorable, and two, they are the perfect bite size snack. Of course I should probably find something a bit healthier to be snacking on since the holidays (and my wedding) are quickly approaching, but hey at least these have fruit in them! Not a total loss.
I apologize for being so hit or miss lately, and thank you to everyone who still keeps coming back. Once this weekend is over, I am done with travel for three weeks so I’m hoping to be better. The Chicago marathon is this weekend! My friend Lindsay and I will head up there to meet a few other girls that are running with me. Everyone I’ve talked to says Chicago is a great marathon to run, so I’m just praying for good weather and strong legs. Training has been a bit hit or miss this year, but I think I will struggle through.
I’m making sure to carb load this week with these beauties. Don’t you just love a good flaky butter crust? I know I certainly cannot resist one! I always use my go to pie dough recipe, and it is yet to fail me.
I think it yields the absolute perfect crust. Plus it is really easy to throw together. It takes all of five minutes.
What are some of the first things you make each fall? Pies are definitely on top of my list, as well as chili, soups, and roasts.
I apologize because I don’t really have much of a recipe for these guys. What I would do if I weren’t me (i.e. if I were you and actually took time to measure) is make the filling for your favorite apple pie.
See, I just kind of went ahead and chopped up some apples, added my favorite spices, a whole mess of brown sugar, a little butter, flour and some half & half and this is what I ended up with. Sure it worked, but there really wasn’t any formal method used. Again, I will try and be better.
If you were really feeling frisky, I think it would be fun to do half apple tarts and half pumpkin tarts, or maybe chocolate bourbon pecan tarts, because those rocked my world last year. Variety is the spice of life. Or so they say. Whoever they might be.

- 1 batch pie dough
- 3 granny smith apples, peeled and finely chopped
- ½ cup brown sugar
- 1 tsp cinnamon
- ¼ tsp allspice
- ¼ tsp cloves
- Juice from one lemon
- 3 tbsp flour
- 2 tbsp half & half
- 2 tbsp melted butter
- Preheat oven to 375.
- Roll out pie dough. Use a cookie cutter to slice into smaller circles. Press circles into a greased mini tart sheet.
- Combine all remaining ingredients. Stir together. Pour into tart shells. Bake for 40 minutes or until tarts are brown and apple has set.
