Let me know if you have any luck getting it closer! I noticed when I was at Sams the other day in the baking section for large quantity bakers they sold soybean oil. It looked just like vegetable oil. This recipe is very, very good, but it isn't exactly the same.

I must try this! Sounds so interesting! I made cauliflower mashed recently and absolutely loved it. I steamed a head of cauliflower for about 15 minutes then processed that in the food processor with a head of roasted garlic and a bunch of dill! So good!

No joke. The banana I used in this recipe was minutes away from being tossed. Usually i'll just freeze really ripe bananas to use in my smoothies, but this one was beyond the point of freezing. However, it was perfect in the cookies and they are incredibly soft because of it!
