About Me

I'm Lindsey, a girl with a major sweet tooth who absolutely loves to cook, bake, rescue dogs, and exercise.  I've been blogging off and on for a few years and have mainly focused on all the creations that come out of my kitchen.  I'm a firm believer in the "everything in moderation" mentality.
I also love to write about my animals.  I have one dog, Lizzie, that is all my own. But, at any given point, there are multiple other dogs living with me. You can read more about each of them and my animal fostering on Lizzie & Co

Cooking

"I was 32 when I started cooking; up until then, I just ate. " ahh the great Julia Child

This applies to me except replace the 32 with 21. When you have an amazing cook like my mother preparing your meals, it is hard to get yourself into the kitchen.  Cooking is a central part of my family, on both my mom and dad's side.  My recipes are usually a play off of a bunch of different recipes I have read.  Some are ones that have been passed down from my nana to my mom to me, others are some I google or find off of other food blogs. The passed down recipes are the ones I truly cherish and are usually the ones I follow step by step, not altering a thing. The recipes are perfect as is and tinkering with them is just not ok in my book.
 
Running

"Running is a big question mark that's there each and every day. It asks you, 'Are you going to be a wimp or are you going to be strong today?'"

I love to run. I didn't realize it until about 6 years ago, but it is another one of my passions. It gives me the opportunity to really see and feel my neighborhood, while also doing something good for myself.  You can't really get to know the nooks and crannies of a city street until you get out and run it.   So far I've ran two full marathons, 3:58:28, several half marathons ranging in time from 1:48 to 2:07, and a bunch of 5ks with my PR being 23:57.  My goal is to try and run one full a year and to PR a half at 1:50.  Qualifying for Boston someday would be pretty awesome too.  Currently I have  the Chicago marathon in October 2012!

What fulfills me is my family, Wes, my precious Lizzie, my friends, all the foster puppies I get to take care of, my community work, cooking, running, and a whole variety of other things.  You will hear about all of these things as you read through my posts.  I feel very blessed.
