So with my recent pescetarian decision, I have been looking up all sorts of different recipes to try. Yesterday I found one for black bean burgers, so I thought I would give it a try. Here is what I did
1.5 can black beans
.5 can garbanzo
3.5 tbsp greek yogurt
1/2 cup bread crumbs
2 tbsp cumin
1 tsp oregano
1/2 tsp paprika
I started by combining 1 can black beans, yogurt, bread crumbs, and all the spices in my handy food processor. I pulsed until the mixture was all blended up and moderately chunky. Then, I combined that mixture with the remaining beans and the lime juice. I let everything sit in the fridge for about an hour. After that, I just cooked them on the stovetop, the way I would a typical burger.
Overall, I thought it was a pretty good meal; it was definitely filling. The patties looked just like hamburgers… very deceiving! However, the inside was a little mushy. Any tips on how to make these a little bit thicker? Maybe I shouldn’t of pulsed the black beans for so long. It still made for a good dinner, and I think the leftover mixture could be turned into a really yummy black bean dip. I might work on that later on. We shall see…
I am so glad it is friday. Tonight I am going to a Pat Green concert with some girlfriends… can’t wait! I haven’t seen him in so long, so I think it will be a lot of fun. And then tomorrow, I am re-celebrating my birthday in Dallas. The plan is to get some very yummy pizza and hang out on a patio for a while. Should be a good night 🙂
On a side note, Lizzie has been on a bit of a bad streak lately. The dog cannot stop tearing up clothing, especially…. underwear. It is AWFUL. Yesterday, I found the straps completely chewed off of my bathing suit cover up. Today she somehow got into my laundry bin (it is tall, she would of had to stand on her hind legs to get in) and dug out a number of things she feasted on during the morning. Oh dear… good thing I am very tolerant. I think she is unstoppable. Yikes.
