Breakfast is best!

Happy Thursday!

This has been one of those weeks that has just dragged on for me. But, we are nearing the end.  The weekend looks to be very busy with a birthday party, a big junior league event, and picking out final colors for the painter.  Yes, I have finally decided on most room colors and have found a painter.  He starts next week!!  I’ll take some before and after pictures, so I can share with everyone.  I am so excited; I can’t believe it has taken me a year to do this.  Time flies!

So a meal that I always enjoy but really just don’t blog about much is breakfast.  I have always been a breakfast girl.  Growing up, it wasn’t an option to not eat breakfast in the morning. My mom made sure I had a glass of milk and something to eat everyday before I left for school.  I guess since this was just part of our routine, it never really occurred to me that some people don’t eat breakfast.  The thought of not eating until lunch time everyday is absolute torture for me. However, I do hear about people who just get nauseous from eating in the morning, or really just don’t like breakfast foods.

However, my breakfasts are never anything too crazy. I basically live in a fog anytime before 8 am, so breakfast is usually something that happens at work, or much later in the morning on the weekends.  5 out of 7 days of the week I have some form of oatmeal for breakfast. We keep a big container of old fashioned oats at work for everyone to use, and I always bring in my favorite mix ins. It is an easy, filling breakfast that covers all my basic needs for the morning, and is one I think everyone can work into their routine.

The beauty about oatmeal is you can make it the night before and simply warm it up in the morning. Or, you can make it in the microwave at work, which is what I do.  Here are some of my favorite toppers that are easy to keep at work as long as you have a fridge:

Dried fruit
Fresh fruit (banana, apple, berries etc)
Fat free yogurt
Almonds or pecans
Peanut or almond butter
Dark chocolate

And the list goes on and on. You can add whatever you like in there, pumpkin in the fall, berries in the summer. Here is my bowl from this morning that had oatmeal, 1/2 banana, 1/2 cup yogurt, cinnamon, honey, and 1/4 cup granola mix in it. If I didn’t give up nut butters for lent, you bet there would of been a tbsp or so of peanut butter in there.  It took all of 3 minutes to throw together and kept me full until lunchtime at 1.

Try this sometime. It is so much better than the oatmeal that comes in the prepackaged flavors. And it is good for you!  Perfect way to get your day started.
