Yesterday I had friends Thanksgiving at my house… Friendsgiving as some call it. Our food spread was absolutely amazing. Although, I do think Wes won for best dish out of the group. His idea to make a mashed potato pie quickly evolved into a “every Thanksgiving leftover except turkey and cranberry pie.” Delicious hardly explains the potato pie. It was a decadent, comfort food masterpiece.
I want to pack it up and take it with me to eat after I run 26.2 miles in 3 weeks.
Alas, I don’t think potatoes travel well. And I’m sure my fellow passengers would not appreciate me smuggling a garlicky, onion, potato pie in the depths of my carry on luggage.
All of the dishes from last night were noteworthy, with some of my other favorites being cheesy potatoes, bacon dip, crock pot turkey breast, and green beans. We also had three different desserts, pumpkin lust pie, chocolate pie, and a pumpkinized spin on my ginger sweet potato pie. My friends sure know how to cook. Talk about a food coma.
After last night’s smorgasbord, I was feeling a little lethargic this morning. In an attempt to get my act together, I’ve been pumping myself full of healthy food with today’s lunch featuring a tangy salad. I’m running low on the ingredients for my normal spinach smoothie so made this salad instead. Easy and full of flavor, this salad came together in a hurry.
Lemon Salmon Salad
2 cups Arugula/Spinach mix
4 ounces salmon
1/4 cup chopped almonds
1 small orange, sectioned
Juice of one lemon
1 tsp olive oil
1 dash salt
1 dash pepper
Prepare salmon on stovetop. I just seasoned mine with a little salt and pepper.
On a plate, add lettuce, orange, and almonds. In a small bowl, stir together lemon juice olive oil, salt, and pepper. Once salmon is cooked, chop and add to salad. Drizzle lemon juice mixture over top of salad and toss.
