Two fantastic cookies sandwiched together with marshmallow creme puff icing. Could it get any better?
When I was much, much younger and had the metabolism of a cheetah, I would always get one of the stuffed double chocolate chip cookies from Great American Cookie Company whenever I went to the mall. Despite the clothing and accessory purchases, that cookie was always my favorite buy.
I should probably be ashamed of that. I’m not.
These days I have to lay off the Great American Cookie Company purchases. Every time I stroll by in Northpark though, there is always a part of me that thinks about grabbing a cookie, eating it in my car, and hiding all evidence. It doesn’t count if no one else knows.
For the icing
6 tbsp butter
3/4 cup marshmallow fluff creme (the stuff that comes in the jar)
1 1/2 cups powdered sugar
1 tsp vanilla
2 tbsp fat free half & half (healthy!)
Once your cookies have baked and cooled, combine butter and marshmallow fluff in a medium sized bowl and beat until combined. Slowly add in powdered sugar, vanilla, and half & half. I would start by adding in one cup of powdered sugar. If that isn’t sweet enough for you, then go ahead and add a little more.
Smear icing on the inside of one cookie, then press another on top to create the sandwich.
