Salmon & Potato Salad

Such a beautiful Saturday afternoon here in Dallas.  Wes and I have had a pretty busy day so far, getting a few things done for our registries, playing with the dogs at the park, running, cleaning cars, and now about to get ready for our engagement party!
Our dear friends decided to put together a Jimmy Buffett themed event to celebrate our engagement.  I can’t wait. I’ve been putting music together for it all afternoon and blared it on my Ipod during my run.  It made for quite an enjoyable run.
And to top things off, our neighbors are throwing a pretty big little crawfish broil outside right now. While I’m not a big fan of the way crawfish taste (it’s a texture thing), I love the way they smell.  We’ve been sitting outside for a while, enjoying the sun and the smells.  
Pretty good Saturday. 
We also had this salad earlier in the week, so I thought I would share it with you.  It is definitely different, but I really liked it.  

Smoked Salmon and Potato Salad
Modified from this recipe
4 ounces Smoked Salmon
2 potatoes, peeled
1 bag Bibb lettuce
8 Asparagus stalks, chopped and cooked

For the dressing:
2 tbsp olive oil
2 tbsp rice vinegar
1/2 cup fresh dill
2 tbsp dijon mustard
1/4 tsp fresh ginger

Bring about 4 cups of water to a boil, then drop in potatoes. Cook for about 6 minutes, until potatoes are able to be pierced with a fork, but are not at all mushy.

While potatoes are cooking, combine all ingredients for the dressing in a food processor and pulse together. Set aside.

In a large bowl, add cooked potatoes, salmon, asparagus, and bibb lettuce. Add dressing and toss together.

Or you can just reserve some of the dressing on the side for dipping. This is how I prefer my salads.

So I know it sounds a little weird, but I really enjoyed it. The texture of the potatoes was perfect, and the dressing was fantastic over the smoked salmon. We will definitely be enjoying this again throughout the summer.
